We sell high-quality, free-range Paddlefish Caviar and Paddlefish Meat ranched in Ohio and Kentucky. Our Caviar is sold in various sizes: 50 grams, 125 grams, 250 grams and 500 grams.
Paddlefish Caviar
Our ranched paddlefish is similar to Osetra in berry size and color — dark gray to gray with a greenish tint. The eggs are firm yet rich with a mild flavor. The finish is clean and buttery with a hint of fish and brine.
Paddlefish Meat
This dense and meaty fish has no bones and is very moist. The mild flavor makes it family friendly, even for those members that don’t love fish. It is a very forgiving fish to prepare too — almost impossible to over-cook. We have this product available in Mid-November when our fishing season begins until it is sold out-usually in the summer.
